"Something's Not Quite Right With The Prices Of Red Caviar."

Belarusians are discussing the rising price of this delicacy.

“Something’s not quite right with the prices of red caviar,” say the Belarusians we interviewed in unison, after taking a closer look at the store shelves. This product, traditionally associated with luxury and holidays, is costing a bit too much this season. A kilogram of this delicacy can cost a third of the country’s average salary—900 rubles, writes Onlíner.

“As a consumer, I’d like to warn you: red caviar has decided it’s black,” commented one of my fellow journalists. I hate to disappoint you, but no: the price per kilogram of black caviar is over 6,000 rubles (two average Belarusian salaries for September). It’s unlikely we’d buy caviar by the kilogram, but even the price of a small jar is quite surprising.

According to Belstat, in September of this year, salmon caviar cost an average of 311.61 rubles per kilogram in retail stores.

In September of last year, the average price of this product was 261.44 rubles per kilogram.

Belarus produces its own black caviar, but red caviar on store shelves comes mainly from Russia. At the same time, as reported by the analytical platform Tridge, red caviar production there has sharply declined—to approximately 3,000 metric tons in 2026, compared to nearly 13,000 metric tons last year. The reason cited is abnormal warming in the northern Pacific Ocean, which affects fish migration and food sources.

The decline in production has led to a doubling of retail prices for pink salmon and nerka caviar, while prices for chum salmon caviar have risen by 50%. Industry experts note that red caviar is shifting from the category of everyday food items to that of luxury or symbolic goods.
